The starter cultures used for the inoculation of yoghurt (also cheese) milk can be either in a reasily soluble form for direc using or concentrated cultures for the propogation of bulk starter.
In both case, the bulk culture which is ready to be inoculated into the milk has to be prepared in advance and stored cold under safe conditions until the time they it will be used.
