The curd and whey mixture formed by the crushing of the curd in the Process Tank is taken to the cheddar vat through the transfer pump or by the effect of gravity. Here, firstly, whey is separated through the perforated system.
During the whey separation process, curd continues to be mixed simultaneously through mixing arms. Once the desired dry matter ratio is reached, the curd is salted in certain proportions, mixed, aged, cut into certain sizes and the transfer-turning process is carried out. The curd, delivered to the conveyor system by the pushing system, is transferred to the boiling machine.
